Taco ScoOps!


Having a babe sure keeps you busy! 
Just stopping by to share a quick, delicious recipe today!

First, preheat your oven to 350*, and spread tortilla scoops style chips on a cookie sheet.
My favorite's are the multigrain!

Mix taco mix accordingly.

Cook meat and simmer taco seasoning mix

Scoop cooked meat into chips

Sprinkle cheese


and melt in oven about 5 minutes

This is our new favorite in our house! And this recipe is nice and quick I can even cook while holding Emma's attention! (while safely secured in the bumbo on a island far away from the stove.)

Mini Omlettes


I just wanted to stop by today to share a quick easy recipe with you guys that makes morning a little less busy. These are healthy, and easy to heat up!
Just start with a muffin tin, egg whites, shredded cheese, pam and cooked baccon. Spray with pam, and fill with egg whites.
Top each well with cheese & bacon, and pop in the oven for 20 minutes @  350*

Voila! Perfect bite size breakfast you can either pop in the fridge or freezer for whenever your ready! I put two in each container & freeze!

Birthday cake!!!

I have always used cake out of a box, I was absolutely convinced that cake from scratch was the hardest thing ever! Boy was I wrong....the folks over at Sweetapolita have some really great recipes, so last night I busted out my new shiny kitchen aid and gave their Rainbow Batter a try!

It was not only easy, but DELICIOUS! I saw cakes over on Pinterest like these, and decided to give it a whirl. I was so easy, after you make the batter you just divide the batter (I used 5) and then used a gel food coloring to dye the batter.

The frosting recipe I used was SO easy to make!! I found it here, and let me tell you when you add the milk the frosting is like magic in front of your eyes, it gets SOOOOOO fluffy and fantastic :D

After they cooled, I stacked them in layers with a little frosting in between and I am in love with how this turned out!!!


Here is the final product, I have to say I think I will be baking cakes from scratch a lot more! <3

Carmel Apples..Inside Out

Its Recipe Tuesday!

My family had a potluck this weekend...I made chocolate chip pumpkin muffins, pumpkin pie tarts, and inside out Carmel apples.

The Caramel Apples were delicious and easy to make.!
Here was my inspiration: Inside out caramel Apples, I think this was a pretty good attempt for my first try!

Ingredients:
3 cans Condensed Milk
8 Granny Smith Apples
1 Cup crushed walnuts
1 Can of Sprite

Start with 3 cans of condensed milk, take the labels off, and put them in the crock pot submerged in water. Turn the crock pot on low and leave over night (around 10 hours).

Take the cans out and let them cool, while your doing that you can prepare your apples.
Clean your fruit, and cut in half
Take out about 5-6 small apple bites using a melon baller, so there is still a decent amount of apple, but enough that there is a "bowl"

Pour sprite inside and around the edges, this prevents browning!



Keep going until you have all your apples cut and cored out. I kept my apples on the counter to dry while i did the rest so they had a chance to dry from the sprite

(Notice the caramel is still in the milk can, this is seriously the easiest thing ever to make!)

I wish i had a picture of this part, but its pretty self explanatory, just take a spoon and fill the middle with caramel, be careful that the apple is pretty dry inside, otherwise the caramel wont stick.



Top the apples with crushed walnuts or any other nut of your choice and pop in the fridge for about 3-4 hours!

You can slice each half in half, or quarters for smaller slices depending on how many people you want to serve!!

Everyone enjoyed these, and it was a quick recipe, the entire thing only took about an hour to assemble!
